With simple ingredients and fresh flavor, you’ll be hooked from the first bite of this healthy treat!
From healthy fats to protein, these key lime pie protein balls are one of my favorite ways to reach the daily values I’m shooting for and my taste buds don’t mind at all. This is the perfect snack for satisfying guilty pleasures with guilt free ingredients!

Ingredient Information For Key Lime Pie Energy Bites
1 cup cashews: While I recommend unsalted cashews for this healthy treat, salted will do in a pinch. We love the thrive market organic unsalted cashews for this recipe.
Around 15 pitted medjool dates: Ensure your dates are soft for this recipe. If using very large dates, consider 12-14. If using very small dates, consider an extra date making the total 16-17.
1 tsp lime zest and 1 tbsp fresh lime juice: Add more lime zest and juice for a stronger flavor. 1 tsp is a sweet spot in my opinion, but you might enjoy more! I’ll let you in on a little secret- use regular limes, not key limes for this recipe. It will still turn out great if you do as well!
1 tbsp almond butter: While it won’t be the end of the world if you sub with peanut butter, I don’t recommend doing so due to the overpowering flavor. Almond butter has a much more subtle nutty flavor.
1 scoop protein powder: Vanilla is the best option for this recipe, but similar flavors could be great as well! I always like to add a little protein to our healthy treats to prevent a more substantial blood sugar spike while satisfying a sweet tooth.
2 tbsp ground flax seed: This healthy snack isn’t just tasty- ingredients like flax seed are packed with nutrients. I don’t recommend substituting. If using whole flax seed, this will effect the texture, so stick to ground if possible.
2 tbsp unsweetened coconut flakes: What lime without coconut?! Unsweetened shredded coconut flakes add a tropical flavor and healthy fats to complete our key lime energy balls and whisk you away to a tropical paradise!
White chocolate drizzle: Optional, but yummy! Melt and mix around 1/2 cup white chocolate chips and about 1/2 tsp coconut oil (helps thin chocolate) and drizzle with a spoon over the key lime pie energy bites.

Key Lime Energy Bite Ingredients
1 Cup unsalted Cashews
15 pitted medjool dates (soft)
1 tsp lime zest (add more for stronger flavor)
1 tbsp lime juice
1 tbsp almond butter
1 scoop protein powder
2 tbsp ground flax seed
2 tbsp unsweetened coconut flakes
Optional: 1/2 cup white chocolate + 1/2 tsp coconut oil mixed for drizzling.
Key Lime Energy Bite Instructions:
1. Add all ingredients to the bowl of a food processor (I love our Ninja 9-cup food processor for this recipe!) and blend until mostly uniform. This might take a few minutes. Add a tbsp of water if the paste will not hold together in your hands. It will look crumbly but be moist enough to form a ball.
2. Form into a cube or ball of your desired size. Place onto a parchment covered cookie sheet if adding white chocolate.

3. Optional: Melt white chocolate and coconut oil and mix well. With a spoon, drizzle over squares in a side to side motion.
4. Store in the fridge in an airtight container. Best if eaten with 3-4 days, as they will begin to dry out a bit after a period of time.
More Ways to Enjoy
If shaping the “bites” is too tedious, or you’d prefer a key lime energy bar, simple press the dough into a 9×9 pan with parchment and cut into bars once chilled.
You can also add additional zest to the top of the bites once drizzled with white chocolate.
