Not to be biased, but there’s no potluck dish that could hold a candle to my family’s old fashioned hash brown casserole recipe- and here it is! 

This cheesy hashbrown casserole tops the list for me without fail. 

Cheesy, buttery, crispy edges. It’s ALWAYS my request for Thanksgiving.

Old Fashioned Hashbrown Casserole: My Foolproof Potluck Dish 

This is THE recipe to beat y’all, and it’s been undefeated for decades. 

Cracker Barrel’s hashbrown casserole.. not even close. That coworker’s hashbrown casserole at office get togethers.. valiant effort, but nope.

Casseroles are perfect for larger crowds, potlucks, holidays, or even next day leftovers if not many people are eating. 

This old fashioned hashbrown casserole is also a holiday staple in my family because it feeds a lot!

Easily served with a spatula, there’s no hands grabbing into the food, or liquid drips and mess with this easy hashbrown casserole recipe. 

Why You Should Use Freshly Shredded Cheese In Hashbrown Casserole 

For best results, I shred my own cheddar cheese from a block. Freshly shredded cheese makes such a difference in my opinion! 

Since the ONLY prep in this recipe is simply mixing all the ingredients together, shredding the cheese yourself is totally worth the tiny bit of extra time it adds! 

You can of course use a hand grater, but I use the cheese shredder attachment for my KitchenAid Mixer, and it takes care of a block in under a minute! I can’t recommend it enough. 

No mixer? No problem. My mom loves this hand cranked grater from amazon that keeps your hands out of the way and get the block shredded faster than the old fashioned way.

Old Fashioned Hashbrown Casserole Ingredients

  • ½ stick butter  
  • 1 lb (16 oz) diced hashbrowns
  • 8 oz sour cream 
  • ½ cup chopped yellow onion
  • 1 can cream of chicken soup
  • 2 cups grated cheddar cheese
  • Salt and pepper
  • Crushed Ritz crackers or French’s fried onions, optional toppings

Step by Step: How To Make Old Fashioned Hashbrown Casserole 

  1. Preheat oven to 350 degrees
  2. Melt butter and pour into a 9×13 glass baking dish. 
  3. Pour hashbrowns, onions, and cheddar cheese into a large mixing bowl. Toss to combine.
  4. In a separate medium sized mixing bowl, mix sour cream and cream of chicken soup. I pick out the few pink cubes of “meat”, but it’s not necessary.
  5. Pour the wet mixture into your bowl of hash browns + onions + cheese, and fold until evenly combined. 
  • 6. Pour into the 9×13 pan, spreading evenly to the edges. Season with salt and pepper to your preference. Add crushed Ritz crackers or fried onions on top if desired. 
  • 7. Bake for 1 hour. Add additional time if you like the edges more crispy! Let cool fro 10-15 minutes before slicing and serving for best results.

Freezing And Reheating Hashbrown Casserole

Hashbrown casserole freezes and reheats GREAT. In the event you’re not making this for a holiday or event, leftovers won’t go to waste.

Gift a hashbrown casserole to a new mom or grieving family, and all they have to do is pop it in the oven to reheat good as new.

Though it does well in the microwave or oven, my favorite way to reheat small amounts of leftover hashbrown casserole is in the air fryer.

It keeps the crispiness and even gets more if you let it reheat long enough!
