There’s a reason the Instant Pot is on my Women’s Food and Kitchen Gift Guide, it’s just too handy!
Our favorite things to use our Instant Pot for are shredded chicken and jasmine rice. These are two staples in our meal prep recipes and the Instant Pot makes them both painless.
Instant Pot Shredded Chicken: Uses
My favorite thing to make with shredded chicken is chicken salad! It’s light but still filling, and packed with protein. I meal prep it, make batches to take in a cooler on beach days, you name it!
Shredded chicken is great for casseroles, soups, quesadillas, enchiladas and so much more!
How Do I Make Instant Pot Shredded Chicken?
1. Pour around 1 cup water or chicken broth into the instant pot bowl.
2. Place 3-4 chicken breasts in the liquid. You can clean the fat from breasts now, or when done, if desired. 3 breasts usually yield about 1 lb shredded meat.
3. Turn valve to sealing. Press manual(or pressure cook) and cook on high pressure for 10 minutes. If frozen, add 3-4 minutes. If cooking more, or less, chicken breasts, adjust time.
4. Allow natural pressure release for 10 minutes once done finished cooking.
5. After 10 minutes, carefully remove lid. Remove chicken from Instant Pot.
6. The chicken should be tender enough to shred with a fork, but I prefer to use my stand mixer or a handheld beater to quickly shred the chicken!
