Homemade Chocolate Chip Cookie Cake

Cook time: 20 minutes

Serves: 16

Whether you call it a “cookie cake” or a “pizookie”, skip the bakery line and make one at home! This homemade cookie cake is a staple at celebrations in my house.

This recipe is for a 9×13 pan, but easily split dough in half, or half the recipe to make in smaller dishes! I’ve made them in circular baking dishes so they cut like pies, and everything in between.

Directions

Preheat oven to 350 degrees.

Whisk together 2 1/2 cups all purpose flour, 1 tsp baking soda, and 1/2 tsp sea salt in a medium sized mixing bowl. Set aside.

In a stand mixer using the paddle attachment, or in a large bowl with an electric beater, mix 1 stick unsalted butter (at room temperature) and 2 cups packed brown sugar. Beat on medium speed until fluffy.

Add 2 large eggs and 1 1/2 tsp vanilla extract and beat until combined.

With the mixer off, add flour mixture to the bowl. Mix on medium speed until just combined. Beat on high for a few seconds to pull dough together. Add 1 1/2 cup semi sweet chocolate chips and beat for a few more seconds to combine.

Lightly grease a 9×13 baking dish, or pan of choice.

Dump dough into baking dish. Press dough flat using your hands, making sure to spread to corners.

Bake for 15-30 minutes, Cook time will depend greatly on type of dish used (glass vs dark), and thickness of dough. I recommend checking cake in 2-3 minute increments after 15 minutes.

“So whether you eat or drink or whatever you do, do it all for the glory of God.” 1 Corinthians 10:31
