Ingredients For Southwest Chicken Soup
What’s best about recipes like this is that you can make them your own! Don’t like jalapenos? Leave them out! Don’t want chicken? Double the beans!
For this recipe you’ll need the following.
For the soup:
- 1-2 jalapenos, diced
- 1 cup bell peppers, diced
- 1 cup yellow onion, diced
- Southwest seasoning (below)
- 4 cups chicken broth
- 2 tbsp flour
- 1 cup milk
- 1 cup water
- 1 can black beans
- 1 bag or can of corn (12-16 oz)
- 12 oz shredded chicken
- 1 cup shredded Mexican style cheese
- 2-4 oz cream cheese, softened (optional)
- 1 tbsp lime juice (optional)
For the seasoning:
- 3 tsp chili powder
- 1/2 to 1 tsp ground cayenne
- 1 tsp paprika
- 1 tsp cumin
- 2 tsp salt
- 1 tsp onion powder
I use my Instant Pot to make the shredded chicken, and believe me when I say that is the way to go! 10 minutes of cook time, 10 minutes of natural pressure release and you’ve got painless, tender shredded chicken for any recipe. Check out my recipe for Instant Pot Shredded Chicken HERE!
How To Make Southwest Chicken Soup

- If using Instant Pot Shredded Chicken, or if your shredded chicken is not prepared, start it now!
- Add jalapenos, peppers, and onions to mid sized soup pot on medium heat. Simmer for 3-5 minutes. Use non stick spray if needed.
- Add broth, water, and milk. Add lime juice now if desired.
- Add flour and seasoning blend. Stir thoroughly!
- Add corn. Rinse and add beans. Allow to cook at near boiling for at least 10 minutes, reducing heat if needed.
- Add shredded cheese and shredded chicken. Add cream cheese if desired. Allow to melt at reduced heat.
- Serve alone or with additional shredded cheese and sour cream. Enjoy!
While the ingredient list may look long, you’ll quickly realize how simple this Southwest Chicken Soup is! I challenge you to make it your own– step up the heat if you like to breathe fire, double the cream cheese if you want a thicker soup. However you make it, this recipe will soon find it’s way into your weekly rotation!
