I’m all about campfire s’mores- but not so much about the smell of smoke in my hair. These baked s’mores cups have the best of both worlds.

This bite sized treat is the cousin to another one of my favorite desserts- Layered S’mores Bars. The good thing about s’mores cups? They’re less messy!
Ingredients For Baked S’mores Cups
- 3/4 cup brown sugar
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 tsp vanilla
- 1 cup graham cracker crumbs
- 1 1/4 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 12 marshmallows (if using 24 count mini muffin pan)
- Approx. 1 cup semi sweet or milk chocolate chips
Instructions
- Preheat oven to 350 degrees.
- In a mixing bowl, combine softened butter and brown sugar until fluffy.
- Beat in egg and vanilla.
- In a separate bowl, whisk together flour, graham cracker crumbs, baking powder, and salt.
- Slowly add flour mixture to butter mixture until combined.
- Grease your muffin pan and press approximately 1 tbsp of dough into each muffin spot. Using your fingers or a rounded end of a spatula, spoon, etc., make a hole (pictured above) in the middle of the dough. Make sure to leave dough at the bottom to contain ingredients!
- Place 5-10 (your preference) chocolate chips in each s’mores cup.
- Cut 12 marshmallows in half using kitchen scissors or a non-serrated knife. Place each 1/2 marshmallow on top of one s’mores cup.
- Bake for 8-10 minutes, checking after 8. If the marshmallows aren’t toasting to your liking, briefly broil s’mores cups at 500 degrees, watching closely. Enjoy!
Frequently Asked Questions
Can I Use A Regular Sized Muffin Pan?
You can use a regular sized muffin pan for these s’mores cups, but you’ll have to adjust a few things!
For starters, of course you’ll need more dough per serving. Next you’ll need to increase the chocolate chips and marshmallow per cup vs the mini-muffin recipe.
I recommend using enough chocolate chips to cover the bottom of each “muffin”, and using 3-4 halved marshmallows instead of one.
Can I Use A Different Form Of Chocolate?
For sure! Other options for chocolate include Hershey’s mini bars (since the pieces are thicker), or regular chocolate bars of course.
