These ooey-gooey s’mores bars blow their campfire made predecessor out of the water.

A soft graham cracker crust, followed by fluffy marshmallow creme, sprinkled with chocolate chips, and topped again with more graham cracker crust. These are perfect for parties, potlucks, birthdays, or at our house- just a regular Tuesday night.

Depending on how big you cut these, they can serve anywhere from 9-12.

They maintain shape best when allowed to cool, but I’m not going to blame you for digging in straight out of the oven.

This s’mores bar dessert is an ooey gooey dream that’ll have your family asking for seconds!

S'mores Bar Dessert

  • Prep time: 10 minutes
  • Total time: 40 minutes

If campfire s'mores had a better looking older brother, these would be it. They're warm and melty, minus the fire and mosquito bites.

Ingredients

  • 3/4 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 egg
  • 1 tsp vanilla
  • 1 cup graham cracker crumbs
  • 1 1/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 jar marshmallow creme
  • 1 cup chocolate chips

Directions:

  • 1)
    1. Preheat oven to 350 degrees.
    2. In a mixing bowl, combine softened butter and brown sugar until fluffy.
    3. Beat in egg and vanilla.
    4. In a separate bowl, whisk together flour, graham cracker crumbs, baking powder, and salt.
    5. Slowly add flour mixture to butter mixture until combined.
    6. When combined, split dough in half. One will be the top crust, the other will be the bottom.
    7. Press one half of dough into a greased 8×8 pan.
    8. Using a greased spatula, spread the marshmallow creme evenly on top of the dough, making sure it reaches the edges and corners.
    9. Sprinkle the chocolate chips evenly over the layer of marshmallow creme.
    10. For the top crust, you’ll be using a patchwork method. Take small chunks of dough (around golf ball or clementine sized) and flatten them in your hands into a shingle about 1/3-1/4 inch thick. Place on top of the layer of chocolate chips. Repeat this step, using as big or small shingles as you prefer, until covered.
    11. Bake for 25-30 minutes. Let cool before slicing. Enjoy!
