I don’t call these the easiest oven roasted garlic potatoes for nothing. They’ll become a staple in your weekly rotation once you see how simple they are.

Grab a couple spuds, you’re a couple cuts and 45 minutes away from a perfect side for everything from steak to shrimp! They’re even great for meal prepping.
Another thing I love about these potatoes is that they don’t require babysitting. This makes them not only perfect for nights you don’t want to put a lot of effort into dinner, but when you DO, and have a complicated main dish that will require all your attention!
While you can make these with any seasoning, I highly recommend the McCormick Garlic and Herb Seasoning. You can find this all purpose seasoning at any grocery store, but I buy the big version on Amazon, since it’s a better deal! I like to make homemade seasoning (like this one for tacos) but this stuff’s just too perfect.
I use this same seasoning on the chicken I put in fettuccine alfredo, and in my grilled chicken wraps. Chicken, potatoes, shrimp, and more.. seriously grab this stuff!
You could make these in wedges, or scalloped, sliced just about any way, but I prefer to dice them as shown below. Using a utility or chef’s knife (I have this one from Amazon), I cut the potato in halves and make the cuts below. It’s important to make the slices even so you don’t have small pieces that get burnt while the big pieces still aren’t done.
