My Chipotle order might as well be a script. Every. Single. Time. It goes as follows:

“Bowl please.”

“White rice.”

“Steak.”

“Queso.”

“Sour cream”

“Corn.”

“…a little more corn please!!”

Chipotle’s corn salsa is my FAVORITE thing there!! Steak, cool. Queso, pretty good.

But the corn salsa is the perfect compliment to the chilled sour cream and my favorite flavor in my bowl everytime.

We live thousands of miles across the ocean from the nearest Chipotle. I knew I had to make my own copycat to add to our homemade tacos, fajitas, and burritos.

After searching for the ingredients I made it with my preferred quantities and I’d choose it over Chipotle any day now!

That being said, since there’s no chemistry going on in this recipe, feel free to adjust quantities to your preference. Want more spice? Double the jalapeno. Hate spice? Half it. No big deal!

This copycat Chipotle corn salsa has made it into several recipes at our house. It’s most notably paired with chicken tacos and my homemade seasoning. A pile of tangy corn salsa completes these tacos perfectly!

Copycat Chipotle Corn Salsa

  • Cook time: 6 minutes
  • Total time: 11 minutes

Great for scooping onto tacos, fajitas, and burritos, or just scooping up on a chip!

Ingredients

  • 16 oz sweet corn (1 bag frozen)
  • 1 lime, juiced
  • 1/2 red onion
  • 1/4 to 1/2 cup finely chopped jalapeno
  • 1-2 tsp cilantro, fresh or dried
  • 1/2 tsp salt

Directions

  • 1)
    1. Cook corn per directions on package. Use your usual method if cooking home grown!
    2. Cool corn for 10 minutes to prevent the onion and jalapeño from getting soft.
    3. Combine corn, lime juice, red onion, jalapeno, and salt. Mix well using a large spoon. Chill in the refrigerator for at least 2 hours before serving if desired cold.
    4. Enjoy on your favorite dish, or with tortilla chips!
