Chicken Tacos With Homemade Seasoning

Homemade tacos are a staple at our house. We haven’t been to a Mexican restaurant since we moved to Japan and I’m hardly missing them with this combination of chicken tacos, homemade seasoning, and corn salsa you’d mistake for Chipotle’s.

This recipe will have you kicking store bought seasoning to the curb.

One batch makes 2-3 taco dinners for my husband and I. Having a few servings in a jar is so much better than losing those little packets, or swearing you had one at the bottom of the drawer only to come up empty right before dinner.

For these tacos we usually get burrito sized tortillas, and switch up the toppings like guacamole and cheese from time to time. You can fully customize your tacos by using hard shells or corn tortillas, adding taco sauce or salsa verde, the possibilities are endless.

I definitely prefer these chicken tacos over a ton of dinners, but my FAVORITE part of taco night at our house is adding a scoop of my copycat Chipotle corn salsa to them. Paired with sour cream, this stuff has me going back for thirds!

Make this a few times and you wont even need to look at the recipe, it’s so easy! Chicken tacos are a weekly meal at our house, sometimes twice a week. Having your homemade taco seasoning ready in the pantry makes this a breeze to whip up on a weeknight.

Add more chicken if you’re having friends over, or half it if you want a dinner for one!

Chicken Tacos with Homemade Seasoning

Flavor packed chicken tacos with homemade seasoning and any toppings you please!

Ingredients

Tacos

  • 3 chicken breasts
  • 3 tbsp of our RDR homemade taco seasoning
  • 1/3 cup hot water
  • 1 diced red, green, or yellow bell pepper
  • tortillas, soft or hard

Optional Toppings

  • sour cream
  • shredded cheese
  • corn salsa
  • lettuce
  • guacamole

Instructions

  • 1)
    1. If you’ll be adding Copycat Chipotle Corn Salsa to your tacos and haven’t prepared it yet, now’s the time so it can chill in the fridge or freezer until served. This stuff is my favorite part of taco night!
    2. Dice the chicken breasts in small pieces and place in a skillet sprayed with non stick spray. If you want your peppers to be soft, add them now. Cook on medium heat, stirring occasionally, until done.
    3. Prepare your homemade seasoning, and place 3 tbsp in a jar or glass. Add around hot water and stir well.
    4. Add to skillet and reduce heat to low. If you want your peppers to be more firm, add them now. Simmer for 4-5 minutes, uncovered.
    5. Add to tortillas and top as desired!
